Scala Dei Blanc de Noirs
The pale face of the black Grenache that is made in Scala Dei. We have adapted the technique of the Champagne to achieve a rarity that impacts from the very first moment when the nose gets closer to the glass.

Alcohol content: 13.5% Vol.
Total tartaric acidity: 6.7 g / l
Both old and young vines are used, in order to achieve the fruit and the freshness of the young vineyard and the structure of the old one. The handling of the vines, which is the same for the rosé, pays special attention not to despair them, so as not to lose the aromas due to the sun’s impact and to allow more gems to be pruned, so that the plant produces more drops and diminishes the sugar production; which is translated into a smaller alcohol content in the resulting wine.
The idea is to use the white wine making technique with black grapes instead. In the vast majority of the black grapes the anthocyanins are found on the skin, therefore, if we send the crumbs directly to the press, we will obtain a practically white grape, which we will end up oxidising. This way we obtain a completely transparent must that will be ready to be vinified.
