Scala Dei Blanc de Noirs 2018
This wine is the paler face of the black Grenache grapes in Scala Dei. We have adapted the champagne method to achieve a rarity with an impact from the very first moment that you put your nose in the glass.
Varieties: 100% Red Grenache
Alcohol content: 13.5% Vol.
Total tartaric acidity: 6.7 g / l
Both old and young vines are used in order to achieve a fruity taste and to retain the freshness of the younger vines and the structure of the older ones. The vines are worked the same way as for the rosé; therefore, we ensure not to green prune the vines so as to prevent the sun from damaging the fruit. This way, the plant produces more bunches and lowers the sugar levels, which translates into a lower alcohol content.
The main goal is to use the white wine making technique using black grapes instead. Pigments are mostly found in the black grapes’ skin, however, when the grapes are sent directly to the press, a practically white juice is released, which is then oxidised.
