Scala Dei Cartoixa 2016
Cartoixa is where the two Priorats meet, the typically dense and deep from llicorella and the subtle and cool from the higher clay. This wine is the true heritage of the techniques we were taught by the monks, who have grown and cultivated these very vineyards for centuries.

The grapes are the historical varieties of the area, Grenache and Carignan from old vines of between 65 and over a hundred years old, planted on terraces and in the typical slate “costers” of the Priorat. The landscape, and above all the desire to obtain the best grape, means that the harvest be done manually. The vineyards are located at an altitude of between 400 and 800 metres. Each year,only those vines with the best grapes are chosen and fermented separately, taking special care with the extraction, maintaining the expression of the fruit and taking every step during its elaboration to maintain the quality that the grape had at the time of its harvest.
This wine was made from selected grapes from the ten to twelve best vineyards that surround Scala Dei. Each vineyard is fermented separately in small cement tanks of 2,000kg at a controlled temperature. The maceration lasts for 3 weeks depending on the variety of grapes in order to obtain a wine with the typicality of each of the vineyards.
The ageing lasts for 18 months using a combination of foudres and barrels of different sizes depending on the wine and the vineyard from which it comes. Due to the wide variety of origins, heights and soils a particular treatment for each ageing is required, since each vine is separately cultivated in what we consider the best manner to represent the terroir.
It has a medium-low layer, with a light cherry colour and purple nuances. Its aromas are intense and persistent, combining those of black ripe fruits, plums, cassis and a floral touch of violets with evident mineral notes given by the llicorella soil: the typical Priorat stamp. Then, the ageing provides it with spicy aromas. In the mouth it is a powerful, unctuous, smooth, intense wine, with ripe tannins, it has a full body and is long and lasting.
