Scala Dei Cartoixa
Cartoixa is the meeting point for the two Priorats, the typically dense and deep from llicorella and the subtle and cool of the high clay. The Grenache and the carinyenes are from the very same vineyards that were worked by the monks for centuries. It is therefore made with the procedure we were taught by them.

Its grapes come from historic varieties of the area, not only the Grenache and the Carinyena but also the oldest vines, which are over sixty years old and even more than one hundred. They are planted on terraces and on the typical coastal of the Priorat’s llicorella. The orography and, above all, the desire to obtain the best grapes require that the harvest is manual. The vineyards are located between 400 and 800 meters high. Every year, those which have given the best grapes are chosen to be fermented separately, taking special care of the extraction, but also of expression of the fruit: making each step during its preparation to maintain the expression of the quality that the grape had in the very moment of its collection.
This wine was made from selected grapes from the ten to twelve best plots that surround Scala Dei. Each plot is fermented separately in small cement tanks of 2,000kg at a thoroughly controlled temperature. The maceration lasts for 3 weeks depending on the variety of grapes to obtain a wine with the typicality of each of the vineyards.
The ageing lasts 18 months and it is fulfilled in foudres and barrels of different sizes depending on the wine and the vineyard from which it comes from. By having different origins of Grenache, different heights and different soils, these need a different treatment for their ageing, because each vine is separately raised in what we consider its best measure, so that its terroir is better conveyed.
It has a medium-low layer, with a lightweight cherry colour and purple nuances. Its aromas are intense and persistent, combining those of black ripe fruits, plums, cassis and a floral touch of violets with evident mineral notes given by the llicorella soil, which presents the typical Priorat’s signature. Then, the breeding provides it with spicy aromas. In the mouth it is a powerful, greasy, smooth, intense wine, with ripe tannins, an imposing body, both long and persistent over time.
